It’s Soup Weather

 I woke up this morning to the house being 66. It’s 55 outside as I write this. It is a bit chilly but I am not ready to turn on the heat yet. I am hoping to get a couple of more weeks without it. But we will see. Hubby gets cold very quickly. I went to bed early last night and I saw Hubby’s hot cocoa cup near the sink this morning so he must have been cold. He hasn’t has a cup of that since last spring. Fortunately, I have a good supply of cocoa.

Yesterday, I made a huge pot of chicken tortilla soup. It is one of our favorites. I don’t have a recipe I use. It is one of those a little of this and a little of that soups that I make. 

I used some of the chicken bone broth that I made the day before. Yes, that’s right only one container of bone broth hit the freezer. Hubby asked for some kind of soup when he saw that I was making the broth.  

I added a couple of chicken bouillon to the broth to bolster the flavor. The broth had some meat in it from the bones but I also added one chicken breast that was already cooked and in my freezer.

Next I added a can of corn, a can of rotel with green chiles, and a can of black beans.  We had just a tiny bit of rice left from dinner the other night so I threw that in too. Then I used a packet of Ortega hot and spicy taco seasoning.  I simmered all for about an hour so that the flavors could meld.


I served it with a choice of sour cream, shredded cheddar cheese, and tortilla strips. I skipped the cheese but had a couple of strips and some sour cream.

It was so delicious and I am sure we will be eating off of this pot of soup all weekend. When we get sick of it, I will freeze the rest for another meal.

We are sort of at soup weather, but only because the smoke is in the atmosphere, blocking the sun. The temperature has dropped 40 degrees as a result. I'm grateful it's not blazing hot, but miss the sun/blue sky. Fingers crossed we get some rain & brings relief for the fires.

I love soup! My favorite is probably butternut squash. I also like a good meatball Italian soup, or a cheesy potato soup. Tortilla soup, taco soup. Love them all!

I am hoping that rain will come and extinguish the fires too. When I loved in Arizona I remember all too well the wildfires. I will try to find a good meatball Italian soup. YUM!

I am so ready for soup weather but still blazing hot here in Florida. Like you, when I make soups it's usually a bit of this and that. I keep a bag in my freezer that has all kind of veggies and meats that have been leftover. I just grab out things that work together and add stuff from the fridge or pantry too. We should just call our soups Leftovers soup 🙂

Since it was in the 90s yesterday, it is not quite soup weather yet. That sounds like my taco casserole cooked in the crock pot that ends up taco soup. Love it!

We love soup too. I haven't made any yet as it is still in the mid 70s to low 80s here and a little on the muggy side. It is starting to cool down though — next week it will be in the low to mid 70s all week, so I should be starting to make soup soon. One of my favorites are ham and bean soup. I never make it the same twice. I use different beans, cannellini, black or another kind of bean and sometimes a mixture of whatever I have available. Spices and herbs vary too. That tortilla soup sounds good too. I have eaten it but have never made it myself. I'll have to try your version.

On of our favorite soup is ham and bean. I use great northern beans. When we have a ham bone, I make it. Let's hope that hams are a decent price at Christmas.

It's so easy. If you do, I hope you like it.

Sometimes instead of a ham bone I buy those ham slices with the bone in it. Its a little bone but still makes a good soup and you have the ham to chop up and add to the pot.
