August 5: Low Spend Grocery Month Challenge

It is a gorgeous day, sunny, and the air is crisp. It is 61 as I start to write this at 8am. The high will be 75! I love days like this. I will get a lot done.

I did the weekly shopping yesterday. Besides going to Target for the almost free chicken, I went to Aldi’s and Top’s.

This is what I purchased at Aldi’s. Romaine lettuce because we are finishing our last head of iceberg. I use heaving whipping cream in my coffee and I used my last bit yesterday morning. Hubby was almost out of provolone cheese for his sandwiches. It was on sale for $ 1.49 each which is a fantastic price.

Do you remember the great deal I got a while ago on
salmon? Well, I always look for salmon that is expiring now. However, I have never found it again and we had none left. So this week’s ad showed salmon portions on sale for $ 6.99 a lb. I decided I needed salmon. I found the portion ones and then quickly looked at the whole ones. I bought a whole one because they were $ 6.75 a lb. You can bet that the night that I have fish sticks on my menu Hubby will be eating those and I will eat some salmon. That is how much I hate fish sticks. I am lucky that he does not like salmon.

So I spent a total of $ 24.09 at Aldi’s on needed products.

This is what I purchased at Top’s. I decided to do the bacon deal since we needed it badly. It was on sale for B2G3F. They charged me $ 9.99 each for the ones I had to buy so a total of $ 19.98 for 5 lbs. or about $4.00 a lb. The Hellman’s mayo was a Top’s coupon item so I got that for $ 2.99. The new Frank’s Red Hot Thick sauce items were a request from Hubby. He saw a commercial on TV and could not wait to try them. Since he loves wings in the air fryer so much in football season, I stocked up. They were on sale for $3.00 each. So before my senior discount, my total came to $ 31.97. My  senior discount was 6% or $ 1.92 so my total OOP was $30.05. I can’t find my receipt so it’s a good thing I remember prices. I don’t know whether the cashier didn’t give me one or I dropped it when I thought I was shoving it into my purse.

So the total for this week’s shopping OOP came to $ 54.79 including the Target total of $ .65. I have $ 195.21 left for the rest of the month.

I did not eat any breakfast or brunch today. I am just not hungry. Hubby had a ham sandwich.

I just finished packaging up the salmon and chicken with my food saver. I put one piece of salmon in the fridge for dinner tomorrow night. The rest of the fish and all of the chicken went into my freezers. I added them to my inventory list.

Tonight will be our leftovers for dinner night. I pulled everything out to see what we have. Hubby has opted to have the linguine with sauce and meatballs. I will have the chicken and some broccoli. Any leftover broccoli with be put in my eggs in the morning. The roasted potatoes with be warmed through in the air fryer and eaten with eggs for breakfast tomorrow. We always use up our leftovers. I don’t like throwing money in the garbage.

We are going to spend some time sitting outside today. Hubby is going to run an errand and I am going to pick up the garage. It’s not bad but just needs a little organizing.

I hope you all are having a terrific day!

August 4: Low Spend Grocery Month Challenge

We had a very busy day of appointments and grocery shopping. We were up and out very early this morning to make the trip to the next town to see our doctors. We spent a bit of the morning there. I am happy to report that since my hernia surgery a year and 8 months ago, I have managed with my diet to stay off of 4 prescription pills that I had been taking daily for years. The doctor was so happy with my blood work. I had been released to my primary from my specialist 8 months ago. They said keep up the good work. We don’t want to see you again for a year. You can bet I am not going back on any of those pills. It is amazing what you can accomplish when you don’t eat sugar or carbs 99.9% of the time. It is also amazing how good I feel for an “old lady”.

Before I went out, I cooked up some eggs with cheese for breakfast.

Since we were in the town that Target is in, Hubby said he would take me there to use the $10. gift certificate so that I don’t have to keep track of it anymore. I went in planning on buying some meat with it. They had beautiful looking boneless chicken breasts for $ 1.99 a lb. So I purchased this large package.

As you can see, after the gift certificate, I paid $ .65 out of pocket. So that left me $ 249.35 in my grocery budget for this month.

Tomorrow, I will food saver this and a large piece of salmon that I also purchased today. Then I will try to fit it all in the freezers. I will include my other grocery shopping trip in my post tommorow. I am just too worn out today.

Tonight, I cooked linguine with spaghetti sauce and meatballs for Hubby. I put mine on riced garlic and herb cauliflower. Mine is pictured.

Neither one of us wanted garlic bread so I didn’t make it.

I hope you have a wonderful evening. I am off to go sit outside with Hubby. It is the coolest weather we have had in over a month. We have our windows open airing out the house. It feels so good!

August 3: Low Spend Grocery Month Challenge

I stayed home again today. So no money was spent.

We didn’t eat today until after 12 noon so we had salads for lunch. I had just a simple salad of lettuce, cucumber, bacon, avocado, black olives and a couple of small pieces of monterey jack cheese. Hubby added chicken leftover from last night’s dinner to his.

So for dinner tonight we had our planned Chef’s salad even though we had salad for lunch. It was lettuce, veggies, onions, cheese and ham. Here is a picture of Hubby’s before he put his salad dressing on it. He also eats some green olives on the side. They were delicious. We love salads so much that we could eat them all week long.

It’s been a very busy day for us so I am going to bed early.

See you tomorrow.

August 2: Low Spend Grocery Month Challenge

My son and grandson came to visit today. We were happy to see them. Family is about the only company we can have these days. West is getting so tall.

I made Keto chocolate chip pancakes for West and blueberry ones for the rest of us. I served them with their choice of SF syrup or pure maple syrup. I also cooked up some sausage patties. I had a half a bottle of apple juice to use up so that was our drink. We were having so much fun chatting that I forgot to take a picture of our cooked breakfast.

My son brought us two huge cucumbers, an eggplant and 2 tomatoes from his garden. The tomatoes are not quite ripe(everything is late this year because we had winter until the end of May) but I will put them on my windowsill and they will ripen.

He also made us some homemade dill pickles. He knows how much we love them.

After they went home, I scanned the grocery ads this week for the cheap deals. I am still debating on the bacon at Top’s. They also have Chef Boy ar Dee products for $1.00 a can. I could use more for my stockpile. Since I get the 6% discount on Tuesday, I may buy some more. They also have Manwich for the same price if anyone needs it. We don’t eat it. They have mayo with a Top’s super coupon for $ 2.99. That is a stock up price here. I may add 1 jar to the stockpile depending on the best buy date.

Aldi has salmon for a decent price so I may buy some of that this week since we have none left. They also have boneless chicken breasts for $ 1.89 a lb. but we need no chicken. I do need provolone cheese so if I can get that for $ 1.49, I will. I was going to buy  fresh produce for salads but since my son brought me plenty, I don’t need it. If anyone has eggs at a decent price, I will pick up a dozen or two.

I made shake n bake chicken, some roasted potatoes, and broccoli for dinner.

Here is my plate. It was very delicious. I don’t normally eat carbs(except for pizza once or twice a month) but decided that I could have just a few pieces of potato.

Lastly, my son purchased a huge lot of of office furniture and a 75 inch big screen TV for a great price from a company who was going out of business. The TV was really what he was after. Most of this was in great shape. Hubby’s office chair is falling apart. So my son brought us one of the chairs. Hubby is going to try it out to see if it is comfortable for him. If not, I want it.  My son, grandson and DIL also each kept new desks and chairs. The rest of the things he is selling and will most likely recoup his money. Yes, both of my sons know how to work a deal!

Hubby and I so enjoyed watching the space shuttle undock and the landing for a few hours today. We saw the first one many years ago and have watched them all since. To us each one is just as exciting as the first one. Now we are watching golf.

I hope you all are having a great day!

August 1: Low Spend Grocery Month Challenge

I didn’t even leave our home today. No grocery or any other shopping. I did look at one of my grocery shopping ads for tomorrow. They have badly needed bacon on sale. It is B2G3 free. They usually up the prices of the two you have to buy to $9.99 each which means the 5 would be about $4.00 each. However, I can get a 6% senior discount on Tuesday so it would cost me $ 3.76 each. I still think I can get bacon at Aldi’s for about $ 3.49 each if the price hasn’t gone up. The problem is the last time I was there, they had no bacon. So I will have to think on this some more and check Aldi’s stock and price first before I go to the other market. They also have 80/20 ground beef in large packages at Top’s for $ 2.99 a pound for anyone who needs it. We hate their ground beef which is why I buy the grass fed from Aldi’s when it is on sale.

For brunch this morning, I had a couple of pieces of bacon and some scrambled eggs with monterey jack cheese in them. I cooked a pound of bacon in the oven yesterday. We used some of it for breakfast yesterday and on salads for dinner last night.

Hubby was still sleeping. I am the early riser. Him not so much. So I took my breakfast out on the patio and ate it. It is such a beautiful day. It is sunny and the coolest it has been in a month. I stayed out there after I ate and did some reading.

Hubby made himself a pastrami sandwich about noontime.

These are the things that I will be making dinner with tonight. I had to thaw the dough and the pepperoni since they were in the freezer. I will adding a lot of spices.

Here it is all made. Hubby loves pepperoni on his pizza. I don’t like it cooked. So I have just the two cheeses on my side of the pizza.

Fifteen minutes later it came out of the oven. Hubby started cutting it before I could get the picture. It was so delicious and we have some leftovers for a lunch or a snack. We each had a small side salad with the pizza.

We are now watching NASA. I hope you all have a good evening.

Our Menu Plan for the First Week of the Low Spend Grocery Month Challenge

We will be starting our low spend month challenge tomorrow. As you can see, I have my $250. ready to go for shopping this month. It is 1/2 of what I normally spend. For those who are new and don’t know, there is just Hubby and I in this household. Our children left and married a very long time ago and have their own families.

So to get ready for our low spend month, I looked at my inventory and menu planned yesterday for the next week.

We only eat two meals a day. We have breakfast, lunch, or brunch late morning. Then we have dinner between 5PM and 6PM.

Most of the time we each fix our first meal ourselves. Sometimes we want the same thing and one of us cooks. Dinners, we both take turns cooking.

We usually pick from this list for our first meal of the day:

Sandwiches: Chicken, tuna, BLT’s, or cold cuts
                   Soup
                   Leftovers from dinner
                   Hamburgers or cheeseburgers
                   Hot Dogs
                   Eggs
                   Pancakes or Waffles
                   French Toast
                   Salad

Here is our dinner plan starting tomorrow:

Sat. Homemade Pizza, salad
Sun. Shake n Bake Chicken,broccoli
Mon. Chef’s Salad
Tues. Spaghetti and Meatballs, garlic toast
Wedn. Leftovers
Thurs. Fish sticks, brussel sprouts
Fri. Taco Salad made with ground turkey

We rarely have dessert. Once in a while I will make SF jello or pudding or we have a little ice cream.

We drink iced tea or water with our meals. Sometimes if it is a special dinner like steak or lamb chops, we will have a glass of wine.

In the summer, I try to make simple meals. I cook them the cheapest way I can to save on my utility bill. For example, sometimes I cook pizza in the toaster oven if is a frozen circular one. My homemade one is rectangular and goes in the oven. The shake n bake chicken will get cooked in the air fryer.

I have a bag of leftover broccoli in the freezer that I want to get rid of so that will be cooked in the microwave. The same for the brussel sprouts.

I make my own garlic toast out of leftover hamburger buns and bake that in the toaster oven.

The spaghetti sauce and meatballs will be cooked in the microwave. The spaghetti is leftover from another meal and is in the freezer. It will be warmed up quickly in a skillet. I cook cauliflower rice for me in the microwave.

I will tell you a secret. I hate fish sticks. Hubby loves them. They are leftover from the week that I was in the eastern part of the state. So I will eat them this week because I want to get rid of them. Yuck!

We always have leftovers hanging around so we always have a leftover night or two.

I cook the taco meat on the brown cycle in my pressure cooker and season it too.

We have everything that we need for this week’s meal plan in the fridge, freezer and pantry. So if I shop this week it will only be to pick up an exceptionally priced item that I can incorporate into a future meal plan. I may need produce also for the next week. So I don’t plan on spending much of that $250. next week.

Frugal Things July 2 & 3

Wanting to do something different with our granddaughter yesterday, we went for a ride to Lake Ontario to the Towns of Wilson, Youngstown, and Lewiston. It was a beautiful day and she really enjoyed it.

When we came home, I raided the stockpile and this is what I came up with for a quick and easy dinner.

Of course later last night, my granddaughter had a Hershey’s Cotton Candy ice cream cone. She absolutely loved it. We will see what West thinks of the ice cream later today.

The money saving things we did yesterday was that Hubby put the new clips that arrived to hold all 4 glass doors in my cupboards in the kitchen. He even replaced the clips that hadn’t broken with the new ones because they are much better than the old ones. He also put them in areas that didn’t have clips prior. Now when you close the cupboard doors they don’t make any noise. You could hear the glass rattle before. He did such a better job than the installers did when they put them in. DIY is the way to go on certain projects.

I put our homemade BBQ sauce on the 5 chicken breasts last night so that they could marinate overnight. I used the extra quart jar up that I had put in the fridge a couple of weeks ago. Hubby will be grilling them for dinner tonight using the extra sauce to baste them while they cook. I will cook rice and broccoli to go with it. Ice cream will be dessert later in the evening.

Today, much to my delight, I opened an e-mail from Skinny Syrups that had a 20% off code. We love and use these syrups in our coffee and on ice cream. I was getting low on Hubby’s Irish Cream and my Keto syrups so I placed an order for 2 Keto and 8 Irish Cream. They also now have shelf stable milk so I ordered 3(that is the limit) for my stockpile. The code saved me $ 17.57 and I qualified for free shipping. I stockpile a few times a year with a code or when they have a 50% off sale.

I have decided not to take these syrups out of my stockpile money. Instead it will come out of this month’s grocery budget. The cost was $ 70.30 which leaves me $ 414.25 in my grocery budget for July.

I wish all of you a wonderful July 4th! For those of you who are traveling, I hope you have a safe trip.

July 1st Grocery Savings

Yesterday, I had a haircut appointment. So on the way home I stopped at Aldi’s to see if they had any of their Wednesday sale chicken left. Those Wednesday items go quickly in my store.

They did so I was able to purchase 2 large packages of bone-in chicken breasts. They were $.99 a lb. which is comparable to $1.99 per lb. for boneless. I have not seen the $.99 a lb. price in a few years in my area. I love bone-in breasts because because I can make soup from the bones and meat left on the bone. I could not resist this price and we had just enough room in the freezer for what we needed to freeze.

The breasts were enormous so this is what I did with them. I deboned them all leaving a bit of meat on each bone. I put 4 breast bones in each bag and froze them to make 2 pots of soup which will make at least 3 – 4 meals for each of us. I will boil the bones and then take the meat off to put in the soup. Then I will add some chicken base if needed depending on how rich the broth is, diced carrots and celery, rice and seasonings and let it cook a couple of hours in the crock pot on the patio.

I put 5 of the breasts in a ziploc for a cookout we are having on Friday evening. We have at least 4 people for the cookout and possibly 5. West is coming to spend the day with Alexa and my daughter in law will be arriving that day. I don’t know if West is being picked up before or after we eat.

I will marinate them in our homemade BBQ sauce overnight tonight. Hubby will cook them on the grill on Friday. I will cut them in half so that people can eat what they want. This will make our cookout meal and we most likely will have leftovers for Saturday night for the 2 of us. We will put those leftovers on a salad.

The other three breasts I froze separately. Hubby and I share a breast for a meal because these are so big.

So these chicken breasts will make a meal for 5, 4 meals for 2 of us, and 3-4  soup meals for 2 of us. I spent $ 12.27 for these 2 packages of chicken. If the chicken makes 19 servings, it is $ .645 per serving. If it makes 21 servings, it is $ .584 per serving. You can’t get much cheaper than this for meat servings.

At Aldi’s, I also picked up a bag of yellow onions for $ 1.89 and a 2 lb. bag of carrots for $ 1.29. They were the best prices in the area.

We have been eating our dinners outside on the patio this week. Now that our maple tree and patio tree have grown, we have great shade out there. We have all been loving this and getting some fresh air at the same time.

Did you get any good deals this week?

My total for this shop was $ 15.45. We were out of fresh onions because I chopped the soft ones and put them in the freezer to put in soups and casseroles. I needed the carrots to make a carrot cake.

I started this month with $500. in my grocery budget so I now have $ 484.55 left for July.

Dinner last night was hot dogs on rolls, your choice of canned chili, onions, ketchup, mustard and relish to top them and steamed broccoli for a side. Dessert was fresh sliced strawberries and raspberries with SF Cool Whip. All items were from my stockpile.

How Is Everyone Doing?

We have been doing the same old things here. I won’t bore you with them. I have to admit that I am growing a little antsy with our section of our state still being shut down. I often wonder if our governor ever intends to let our county open up along with the rest of the counties here that are bundled into what he calls a region.

Is everyone’s hair as bad as mine is? It is half gray/white and the other half is dyed. It is getting very long and very unruly. I can’t wait until I can go to the salon. But we have at least another 6-8 weeks before that phase will open up. Ugh!

Well, enough whining already. Let’s get down to talking about what we have done to stay frugal during the past 10 days or so.

I have only gone out for a grocery pickup. We needed some dairy, produce, breakfast meats, snacks, etc. Is anyone eating a lot of snacks during all of this? I stayed away from snacks for well over a year and then I found myself reaching for them. I got on the scale and had gained a few pounds so I immediately worked to get those pounds gone. I am now back to where I was before all of this and have a lost a couple more pounds. But the temptation always seems to be there to reach for them. I am trying my hardest not to touch them again.

We are still working off the tank of gasoline that I purchased in February. Gas is so much cheaper than it was then but I can’t take advantage of that because of an almost full tank.

I continue to make all of our meals at home. No take out at all. Recently, we have had chicken Caesar salads, lamb chops, pizza, hamburgers, a chicken dinner with Green Giant mashed herbed cauliflower, Italian sausage sandwiches, omelettes, and homemade tomato soup, etc.

The mashed cauliflower price has been going up. So I have decided to make my own. I got 4 steamable bags of cauliflower on my last pickup for $ 1.00 each. That was the max that they would allow. I plan on steaming one each time I use one for dinner. Then I will mash up the cauliflower  and add butter and my own herbs. For just a little over $1.00, I will have about 4-6 dinners from one bag. Hubby doesn’t like it so it is all for me! Yum. Around here I can’t get a head of cauliflower for the price of one or two bags.

I have also found myself reusing things. I have never been a saver of plastic bags that come inside boxes. However, Hubby loves those white cheddar Grooves. He had emptied the bag that was inside the box so I picked it up to dispose of it. I couldn’t believe how thick it was. So I washed it out and dried it and I will use it the next time I pound chicken breasts flatter to make them cook faster.

I have also been saving all kinds of containers that cold cuts come in because Hubby has been reusing them to corral things on his workbenches.

On one of our pick up orders, I had purchased a multi – pack of sugar free ready made jello. It seems like I was always making SF jello or pudding so I needed a little break. I was washing out the little cups to put in the recycle bin and I realized that I could reuse them. So I have saved them to put my homemade mashed avocados in to freeze it. The secret is to make sure that you get all the air out before freezing so that it doesn’t turn brown. So the next time I see a great price on them, I will be stocking up. I refuse to pay the regular price of $2.00 and more for each one here.

When I cleaned the basement, I found a huge bag of baby food jars that I had forgotten that I had saved. They were from the two months after my hiatal hernia repair when they had me on a “mush diet.” So I will be using them in the same way as the jello ones.

Our propane tank is empty. I didn’t realize it until I wanted to use the grill and Hubby said we needed propane. So I called two different places where I can get it to find out if they are doing it and how to go about getting it with minimum contact. They are doing curbside if you don’t want to go in the store. So most likely I will do that this weekend. Hubby hasn’t left the house since all of this “disease” started. I put myself in charge of doing any errands that need to be done. I remember so well how sick he was a few years ago so we are not taking any chances with this.

We have a bottle deposit in this state on sodas and sparkling waters. We have accumulated almost 6 bags of returns because there is no place to take them. I am wondering about just putting them in my recycle bin the next time they pick it up. I am getting tired of them being in my way in the garage. Since we have no idea when we will open up here in our county, I hate hanging onto them. A bag is usually worth $1.00 to about $1.50 when I bring them back. I think I will just chalk that up to convenience and let the state keep that money. When Fast Cash reopens for returns everyone will be crowding into this tiny little store to return bags and bags of them. I think I will avoid that.

I continue to do wash once a day to keep everything well sanitized. So I have been using warm water. Most of my clothing gets hung to dry. Sheets and towels I have been using the dryer for along with my wool balls so they dry faster.

I made some homemade shower cleaner yesterday and sprayed the shower before I went to bed. When I took my shower today, I washed down and scrubbed all of the walls which was really easy because the spray had done it’s job.

Some nights I have trouble sleeping so besides taking melatonin, I have been lightly spraying our sheets with lavender essential oil spray. It helps me sleep like a baby.

That is about it for the frugal things. What have you guys been doing frugally?

Before I end today’s post, I have to tell you that it looks like we will see our son, my daughter- in- law and grandson tomorrow. We have not seen them since February. They live about an hour and half from us. They are coming to visit and since it is supposed to finally be nice warm weather, we will socially distance on our patio in the backyard. My son has made Hubby and I each two cotton masks. He learned how to use my daughter in law’s sewing machine and has made all of their masks. Then he had trouble finding elastic. But since he got some this week, he is making us the masks. I am very grateful because I don’t have a sewing machine and they have both been working from home and taking care of West.  He told me that because they don’t wash laundry every day, they boil their masks in water. That is a great idea!

Now if they would just open up the rest of the state, perhaps we can see our granddaughter, son and daughter in law in the next couple of months. I so love and miss all of them!

How We Stay Frugal

I had to go to the lab yesterday. On the way home since I was all garbed in my mask, gloves and goggles, I stopped and picked up a rotisserie chicken that was on a coupon sale at Top’s for $4.99. along with 5 lbs. of strawberries and couple of other things. They had Hot Italian sausage as a coupon item but there was none to be had. A lot of their meat was gone. So with the exception of the chicken, I got no meat.

At this price, I rarely buy one and cook it at home. If I did, between purchasing it and using my gas oven to cook it, it would cost me a lot more than $ 4.99. Top’s is also using the “no touch” method to do them. All of their employee’s were in masks and gloves so I felt comfortable getting one.

We cut a little meat off for brunch yesterday as you can see in the picture. The rest I cut off today.

Then I made chicken salad for dinner tonight. Hubby will have his with Ritz and I will have mine on a bed of lettuce. I like mine with just celery and Hubby likes his with celery and craisins. So just before we eat, he will add them to his bowl. We definitely have enough for two meals so we will have it again tomorrow night.

The legs and wings were saved for brunch tomorrow. We will have some cut up tomatoes and cucumbers to go with those. So we are getting 4 meals out of this rotisserie chicken.

Since the stores are being stripped of meat pretty rapidly here in NY, the stores have decided to ration any meat from now on. So I have decided to ration the meat in our freezer. That way we can make it last a lot longer. We already eat normal portions 3- 4 ounces for most meals. But we can make it last longer by eating meatless meals 2-3 times a week. We love salads so this will not be hard for us while we still have produce. We also love eggs so breakfast for dinner comes to mind. We can make soup and for those of you who make casseroles, a little bit of meat goes a long way with pasta, potatoes or rice.

I had a little bit of a scare today. I went down to the basement to do the treadmill. When I was done I decided to bring up some plastic bags that I had saved, my camera, and a bottle of Keto Skinny syrup. When I got to the top of the stairs, I dropped the camera which bounced down the carpeted stairs. Luckily it stopped after 4 steps and is working perfectly. If I had to replace, it would not have been very frugal.

Since NY put a ban on plastic bags in grocery stores on March 1st, I saved tons of bags to reuse for my little waste baskets. NY has suspended the ban during this coronavirus because they do not want people using reuseable bags. But I know when the coronavirus goes away or we get a vaccine that they will put the ban back on. So I really stuff those bags because all of our garbage has to be bagged per our town. I put them in empty Kleenex boxes and into two cardboard boxes in the basement. I am not saving any that come from the grocery store now for fear they are contaminated.

These are just a  couple of things we do to stay frugal. How about your tips?
